I love Tofu... and I always seem to come up with great ways to make it so that it's not boring. To be honest, nothing that I make is ever boring, but you get the idea. If you love terriaki, then you will love this dish. Check it out and let me know what you think!
Ingredients:
- 1/2 package firm tofu, drained and chopped
- soy sauce
- light brown sugar
- Japanese rice wine
- ground ginger, either fresh or dried
- sesame oil
- peanut oil
- fresh cilantro
To Make:
In a shallow bowl, add in the diced tofu. Add 2 tablespoons of Rice wine, 3 tablespoons of light brown sugar, 1/4 cup of soy sauce, 1 tsp sesame oil, 1 tsp of ground ginger. Mix together and allow to marinate for about 15-20 minutes.
Heat a skillet with peanut oil. Transfer the tofu (not with the sauce) into the hot pan and saute for 3-5 minutes. Next add in the sauce and reduce to medium heat. Cover and let bubble.
Serve while hot over white or coconut rice. Top with fresh cilantro.

Tofu Cacciatore
So I was being extra creative tonight... not that I'm not USUALLY really creative, but I think this dish is awesome and delicious and I'm really pleased with how this turned out. Try it and let me know what you think.
Ingredients (serves 2):
- 3/4 package of Extra Firm Tofu
- 1/2 onion, diced
- 1/2 cup chopped celery
- 1/2 cup shredded carrots
- 1/2 green pepper, diced
- 2 tablespoons tomato paste
- 1/3 cup fire roasted tomatoes
- olive oil
- 1 tsp oregano
- 1 tsp garlic powder
- 1 tsp crushed red pepper flakes
- 1/2 tsp dried basil
- 1/2 tsp paprika
- salt
- pepper
To Make:
In a large pan, saute the onions and celery for 2 minutes on medium heat.
Drain and slice the tofu into small cubes. Add the tofo into the onions and add in the green peppers. Season with salt and pepper. Cook on medium high heat for about 10 minutes until nicely browned. Add in the carrots.
Add in the 1/3 cup fire roasted tomatoes and season with salt. Cook another 5 minutes.
Add in the tomato paste and 1/2 cup water. Add the rest of the spices. Mix together and cover. Cook on medium low heat for another 10 minutes.
Serve alone or over rice or pasta.
Enjoy!

Grilled Tofu + Peas

Light, yet still filling and flavorful, this dish is one of my favorites. It's less than 10 mintues to make, healthy and hearty and I just love it.
Ingredients:
- 1/4 pack of firm tofu - drained and cubed
- 1 cup frozen peas
- 1/4 large onion, diced
- 3 garlic cloves, smashed and chopped
- 1/2 teaspoon rice wine vinigar
- 1 teaspoon spicy stir-fry sauce
- 2 tablespoons olive oil
- salt
- pepper
To Make:
In a small pan, heat the olive oil and add the tofu, onions and garlic and season with salt and pepper. Cook over medium high heat for about 4 minutes. Don't mix until after 4 minutes because you want the bottom of the tofu to brown. Mix together, add the peas, rice wine vinigar and spicy stir fry sauce and let cook for another 3-4 minutes until the peas are cooked.
Serve immediatly.
